We’re sure you can’t wait to try the Manchego cheese made in our film in La Mancha, Spain at Finca Valdivieso. This Manchego is exactly as it should be, soft with toasted flavors, with a very elegant point of acidity and with a texture that tends to be creamy even when the cheese is highly matured. This is the Manchego that you can brag about: it is the Manchego that you have at home when you want to proudly tell your foreign (or non-foreign) friends about one of the cheeses with the most history and name on the Spanish cheese scene.
Valdivieso is the project led by Luis, a young man from La Mancha who, after seeing the world and training in London and Paris, decided to return home to relaunch the family cheese project that his grandfather started more than 50 years ago. Focused on the quality of the raw material and on the preservation of the traditional Manchego recipe, the sheep (Manchego) of his flock feed on the pastures produced on the farm itself. Before little open eyes, everything seems to be the same as it was 50 years ago, however, the arrival of Luis has infused passion and perspective into the project, which now focuses its efforts on improving its facilities and integrating innovative practices that allow Valdivieso to continue taking steps accurate.
